Is there a way to add some classes or races to the game for characters you can control.

Not yet. There are race/class config files (classes.txt, races.txt, etc. ) that have the AD&D defaults in them. We have only just started with the needed engine support for using anything but the defaults. You can probably get away with changing the race/class names, but I would recommend leaving the rest until the engine has full support for it.
