I think they needed the blood because all of the cursed pirates needed to be present there but Bill wasn't there so they got the next best thing: his son.

But... they said they killed him, right? But how could they kill him if he was cursed and because of that, "immortal"?

I got the impression that they had killed Bill Bootstrap BEFORE they stole the gold. So, he was dead before they did the deed that cursed them Jack Sparrow was cursed because even though he wasn't there he was still the real captain of the Black Pearl. Bill Bootstrap even though dead HAD BEEN a pirate of the Black Pearl, and though he himself escaped the curse, his blood still had to be spilled (via his son) to remove the curse. Does that make any sense?

But Jack became immortal only in the end when he stole a coin from the coffin... He stole it in order to beat the captain, so he wasn't immortal before... And Bill didn't get killed before they stole the gold, since he sent a piece to his son... and he couldn't have been immortal at that time, since they managed to kill him.

This is a real mystery.

Unless they DID need the blood of everyone who stole the gold... But it still doesn't make sense how they could kill Bill... unless they just sunk him... but why didn't he get free and look for his son then?

PotC is a great movie. Depp portraits an excellent rogue captain and the atmosphere the directors created is just amazing. I wish they made more movies of this quality!

Bootstrap Bill was not killed per se by the pirates. They strapped a cannonball to his bootstraps and threw Bill overboard( recall the story told by one of the pirates( the bud of the fake-eyed one)).

He sunk to Davy Jones' Locker in other words.

The curse makes you immortal, but not omnipotent. All these years, poor Bill was stuck at the bottom of some forsaken seabed unable to move or get free. I can imagine what were his last thoughts when the curse was finally broken.

"What?! I'm choking! Ack!"

ADD] As to why not just retrieve him from the seabed, understand that the curse does not make you invulnerable. It could be a very deep seabed, or they just forgot where they dumped him.

Once he hit bottom I'm sure he managed to get untied. Then of course he would have had a VERY long walk to find is way out.
