Anybody want to suggest what official mods/plug-ins I should go for? All or are some just a waste of Harddrive?

Are there any nonofficial mods you'd recommend?

I only use 2 non official mod, one is Teleportation ring mod. the other is Breton Girlfriend mod. I've downloaded tones of mods out there but none catch my eyes except for this two.

Also, I got my own mods as well.

My two favorite non offical mods are the Bank mod and the Archmage Tower in Peligaid. Both can be found at Morrowindfiles.

The Bitter Coast sounds are insane to run without. It is small, cool and adds nothing bad to the game. Of non-official, I like Adventurers.

The propylon chamber mod is also useful. Adds a very quick route from caldera to some far away places which would take forever to reach otherwise.

It's an official mod from Bethesda, so it's compatibility guaranteed. Follow Kakero's link to get it.

How tough is the "Siege at Firemoth" (official) plug-in? What level should you be before attempting this quest?

the siege at firemoth mod ? The monsters are easy, but the big boss is very tough ( for most people ) . my level 80 nord never had any trouble with him.

The two I recomend the most are the ones by puma man

Giants and wilderness mod.

And also throw in dragons its something for giants.

This adds lots of creatures to the outdoor world. As far as I know they are all outdoor creatures. Definitely spices up the weakest part of the game for me, wandering around and seeing nothing but nix hounds and cliffracers for 100 hours.

These decrease performance a good chunk though, they add lots of spawning and creatures everywhere.

The graphics models range from really good especially the wilderness mod creatures, to sort of amaturish.

They are the most popular mods also.
