Killer Jay, your best bet is fire, Firestorm works great, or other high damage, large area spells, Damage is the key, and so is Distance! As long as you keep them barely in your sight, your magic will work on them, and thiers will not reach you, save your game before you first confront them. You'll get the hang of it quick enough.

I just finished the serpent place and now I am going to do the stout mines but there are these amazon manitraps in the way and they kill me real quick what should I do?

Run!!!!!

Run to the castle and stay just within sight of them. Then cast Burning Haze or other massive damage spells, run some more cast more spells etc.....

Indiglo is right, large area high damage spells will do (even though my wife ran to them and beat them up in frustration). Have Cure Poison (and/or Cure) ready, because the poison from them is the real killer. By the way there are plenty others coming with high level poison spells (in the Boogre Prison & in Brimloch Roon), so ensure you have more than one char with Cure (Poison) spells, or get Scrolls/Bottles.
