I'm curious to see how many different in-party interactions people have seen, and what the consequences are of them. Personally i've seen dynaheir and minsc talk about absolutely nothing, and more of the same from khalid and jaheira, but not much else.

I never heard much either. 1st time trough the game was with an all-good party - Imoen, Minsc, Ajantis, Pc (lawful good), Khalid and Jaheira. I heard Jaheira say "Nature requires her servants to be well-armed" or something along those lines a few times, but that's about it.
The current game should prove to be more interesting - most of my characters are good with the exception of Montaron. Haven't heard any dialogue yet, but my rep is still in the 12-16 range.

NPC combinations that tend to give interesting conversation are, as far as I know:

Minsc, Dynaheir & Edwin - Edwin has a grudge against Dynaheir, and Minsc gets very protective when he's around.
Kagain & Yeslick - the two dwarves constantly bicker.
Jaheira & Faldorn - same for the two druids.
Xzar & Montaron - Xzar is as crazy as a doorknob, and Montaron, although being forced to travel with him, hates his guts.
Coran & Safana - a little romance.
Eldoth, Garrick & Skye - some more romance, a small love-triangle this time.

There may be more, but I can't think of them.

Tiax and Quayle are very talkative NPC's, to the point of being annoying. Also from what I've heard, lots of NPC's hate Eldoth so there could be some interesting dialog out of that.

If NPC interaction is what you're interested in you should check out BG2. From what little I've played of it there's lots of talking going on, not to mention the fact that you can have romances with some of the NPC's..

I've been browsing the NPC talk, and found some interesting things.

--Alora is fond of Edwin
--Nobody likes Eldoth. Just about every character has something bad to say about him--even Imoen.
--Ajantis respects Kivan, Coran, and I think he doesn't like Edwin too much
--The Eldoth/Skie/Garrick love triangle is interesting. Skie clearly likes both, but hangs onto Eldoth even though he treats her badly.
--Branwen and Shar-Teel get along famously. Maybe it's because Branwen is treated as a lesser because she's a female priest.
--Jaheira doesn't get along with Xzar or Kagain
--Kivan hates Viconia's guts, but Viconia wishes they could understand each other.
--Quayle likes Garrick. Therefore, Tiax hates Garrick

Some fun parties to put together:
--Quayle, Tiax, Garrick, Eldoth, Skie
--Minsc, Dynaheir, Edwin, Xan
--Ajantis, Coran, Kivan, Skie, Eldoth
--Branwen, Shar-Teel, Eldoth, Skie, Garrick
--Branwen, Shar-Teel, Kivan, Viconia, Quayle
--Khalid, Jaheira, Kagain, Yeslick, Xzar
--Xzar, Monty, Khalid, Jaheira, Tiax
--Alora, Edwin, Minsc, Dynaheir, Xan

I'm aiming for the first choice, personally. But only one character, Garrick, is available before Ch. 4! Hmm...filler...

I had Kahlid and Jaheria kill Montaron because he was "too evil". Went to the last save and tried again. This time they didn't attack him.

Oh yea, Alora & Edwin are a nice couple. She even almost succeeds in softening him up in one dialog.
