I'm new to the whole RPG scene but I was wondering if I get a thief/mage type character can I still experience the full experience of a mage (all spells and such) and still be an efficient thief?

Yes, those two class are a very good Mix.
As a thief you can sneak around, wich is very usefull because mages are not the best in a toe to toe fight. As a mage you can cast invisibility spells to help you sneak, and can cast protection spells on yourself.
