I'm not sure all the combinations there must be alot. As for the favorite the most wildly used are either Kensai/mage or Kensai/theif.

Its easy, just choose a non-human char, when you get to select the class just click that multiclass button in the bottom left of the screen, should give you all possible combitnations. My fav is the druid/fighter.

Yes, but combination of classes in dualing must be a valid multiclass combination.

Valid multiclass (and dualclass) combinations are:
Fighter/Thief
Fighter/Cleric
Fighter/Druid
Fighter/Mage
Fighter/Mage/Cleric
Fighter/Mage/Thief
Mage/Cleric
Mage/Thief
Cleric/Ranger
Thief/Cleric
In DUALclassing you cannot be three-classed, but first class can be kit (eg. Kensai/Mage or Assassin/Cleric).
You CANNOT be neither Kensai/Mage/Thief nor Berserker/Swashbuckler.

You can't Dual-class or Multi-class ANY of the classes added in BG2: Monk, Barbarian or Sorcerer. Paladins and Bards also cannot be combined with anything (even though a Cleric/Bard would be so sweet], Rangers can only be combined with Clerics, and Druids can only be combined with Fighters. Everything else is a valid combo.

If you're Multiclassed, you cannot take a kit at all (with the exception of Gnomish Illusionists). If you're Dual-classed, you can take a kit oon your FIRST class, but NOT your second (a rule which I, personally, disagree with).
