Looking over Gamebanshee's class guide, you can pick up 5 classes total - 2 first tier, 2 second tier, and 1 third tier. Is this the same within the Sisterhood? It doesn't appear to have a first level class, making me hope that I can take my adept up to crusader, join the sisterhood and still get valkyrie and war witch status. Anyone tried this yet?

It's almost the same with the Sisterhood. There is no first tier class, just second and third tier. So you can follow the plan you described without a problem.
BTW, that War Witch Drain Life ability is really, really handy. Go into hand-to-hand with a magic weapon, and you almost never lose any HP
