One of my most memorable experiences would have to be fighting al-sedexus.

Things wernt looking too hot, taken alot of damage and she was pretty much unharmed.

my lord manages to cast superman level 7 on my samurai.
then my ninja lays on a few nunchaka blows, most missing, except the last.
WHICH PARALYSES!
Then its my samurai's turn...
and he gets a 6X lightnight strike...
using demonsbane (double damage vs demons)
on a paralysed demon
with superman at max strength
oh baby

6 thwaks of triple damage followed by 2 hefty bops from the enchanted wakashi turns a mostly healthy al-sedexus into CREAMCHEEZE!

the next round my samurai gets first go, and 2 more zesty thwacks with demonsbane and she is GONE.

And the battle before that i was fighting Eldorado, he retreated on me into the summoning chamber! when i followed i found the green al-sedexus cast spells at him, fighting on MY side. woot!

Yah, and if you do this before the Templar bit, you can kill her right away, and she still shows up at her altar. You can leave the Rapax areas without the hex, and even go down there and kill her again if you want.

Mine is my first encounter with the battering hogar in northern wilderness. My party was level 10 at the time.

Holy crap. There were 4 deathscreams in the second combat round, and the other two were wiped out in the third.

I guess mine has to be the first time I played the game after it was released. Running a 6 char party I stumbled upon the Temple at Level 8 and couldn't put it down. Took me near 2 days of trying to beat it, and was overjoyed to have done so. But it did teach me a technique for taking on the Temple which I still use, so I guess it was time well invested

I also well recall in that game running into a bunch of Picus on the Arnika road and getting wiped out on a single round. I still now avoid Picus!

I've already posted my mos memorable combat experience here, but here goes again:
It was when I went into the Rapax Away Camp while being hostile to the Rapax. It was about 40 or 50 rapax in that one combat, most of them templars or templar knights. I only survived it (without deaths) thanks to element shield and a heal all instrument.

I had one yesterday :

It seems, that my party members are very Tasty . I encountered 2 ( yes, only two ! ) Swallowers (expert difficulty) at the Umpani Base Camp. I only won because there were 2 Lieutenants with their Blunderbusses in range. I played a party of six and they swallowed four of my guys before the umpani killed them.
(party level was 9/10).

First round:
My Lord didn't hit , my Ninja was swallowed first, my Bard was the second, both mages casted (paralyze failed, fireball damaged them)

Second Round:
Lord was swallowed,Gadgeteer used Lightning Rod (suffered about 20 Dmg from bite), both mages casted.

Third round:
Decided to run, because the Umpani were close now. But before I could run, my Gadgeteer was swallowed.

Fourth round:
Fortunatly the Umpani were close then and I hide beside the entrance and watched the combat. Two rounds later the Umpani had won and all party members returned ( alive ).

I am really looking forward to meet Nessie .

In one of my first expert ironman parties, the SE temple fight. The toxic cloud cast on my party worked very well, after two rounds the whole party was unconsis(?), well, ko. Then the death wishes and death clouds slowly killed my party members (and the opposing cultists and elementals, due to eye for an eye). About 6-8 rounds later, the priest (iron will) woke up - all other party members were dead. After some rounds of ressurrection, i won the fight.

I find a lot of experiences are memorable because if you have a fair number of enemies, they take so LONG that you tend to remember them. My two most memorable both involved long grueling coming-back-from-the-brink-of-death and overcoming all odds to be in the box seat only for the power to go out (fighting to enter the rapax castle), or and computer to decide it was a good time for a BSOD error (fighting in the SE wilderness temple). There is nothing quite so soul-destroying as enduring through the endless movements and arrow shooting and fireballing and death wishing or these enemies and managing to stay alive only to have it all disappear and have to do it all over again
