I'm not sure if this is a bug or not.

I liked the look and stats of the Morningstar of Deathattacks and was looking forward to dual-wielding a couple of them.

Unfortunately, although it is classed as a medium weapon and my character is human, it seems that it is only possible to use one of these weapons at a time.

Has anyone else had this problem? Or am I doing something wrong?

Nope, morningstars cannot be dual-wielded. Already tried it with my dwarven bard.

It's because of the chain. I'm sure they couldn't figure out how to make it look right, and while I'm fairly sure it would be hard, somebody probably really could dual wield them. However, chained weapons in NWN's are not dual wieldable.

Oh heck.

And there was I hoping eventually to have a Monk dual wielding nunchucks.

Dream on.

Let me rephrase that, they aren't dual wieldable with other chain weapons. You could, for example use a mace in your off hand.

Please note, everyone, the same rules apply to whips. (It has been attempted.) As well, as there are no graphics for having whips or morningstars in the other hand, you would not actually "see" your character wielding both at the same time. Similar issues happen when using a large-sized character and attempt to dual-wield ANYTHING. (Minotaur using a greataxe and a bastard sword, for example.) The second weapon will not be shown, as there are no graphics done up for such an occasion.
