I don't understand what's happening. My main characters is a fighter/mage, and since he's still only level 1, can only memorize one spell. However, the last couple of times I've played, whenever my characters sleep and it says "Spells have been successfully memorized," the spells not available for use. What's going on?

What type of armor are you wearing? I ask only because you say you're a fighter/mage. Take off your armor (or wear a rose instead), and then check if you can cast your spell. Wearing leather armor or stronger will disable your spells.

Yup, armor makes for no spells. I'm not sure about helmets though.

It has nothing to do with helmets, only armor

Although it is availabe REALLY late IIRC, just for the record: Elven Chain Mail is Spellfriendly.
And while wearing no armor you can always use bracers to get your AC down.

Well, I don't remember that being available in BG1. As a side note, it's also 'hide in shadows friendly' too

There is no Elven Chainmail in BG1. Anywhere. (Not counting any items that may have been added or changed with BGT installed, that is.)

There is indeed a suit of highly enchanted Chainmail, and it is indeed worn by an Elf, but that does not make it Elven Chainmail.

Characteristics of Elven Chainmail are:
 • Does not block the use Thieving skills (although it does cause skill penalties while worn)
 • Does not block the casting of Wizard spells
 • Can be worn by Thieves (but not by Druids, Wizards, or any kits that forbid metal armor)
The characteristics of the Chainmail in BG1 are as follows:
 • Allows Stealth while worn
For real Elven Chainmail, you've got to wait until BG2.
