Is it possible to get the items that you need form the sculptor without fighting Greywolf? Everytime I have played I have protected the sculptor, killed Greywolf and taken the items off of the sculptors body after he dies. Is that the only way?

yes - at least if you also want Greywulf's sword (and you want to get it )

I have never tried it - but i assume you can pickpocket him

No, there IS another way to do the quest, though as Ar-Cunin says you won't be able to get Greywolf's items, so your way is preferable.
But the other option is refusing to protect Prism from GW and killing him yourself.

At the Nashkell Mine's map. Hunt around until you find Prism, then he'll find you. Sometimes rather too quickly if you're not prepared.

This was one of the oddest quests in the game. Talk to this artist. Bad guy shows up. People die. Left holding...
I always shake my head at the end of this quest.

Maybe the designers just wanted the opportunity for a beginning party to get a decent weapon, a bit of gold, a rep point and a quest under their belt all in one?
