Try flamestryke.com and go to the wizardry page. There you will find very detailed info on building a bishop and realm scores. There is a great page on what level you need to be to learn new spells. Also the higher the school of magic, ie. wizardry, divinity, alchemy, phyonics that is the one that gets trained. So alchemy of 25, and divinity of 20 cast heal wounds and you train alchemy. Try and pick some spells specific to just the one spell book you want to practice, like acid splash for alchemy. You can also mix potions and bombs to raise your alchemy and to raise money. Flamestryke has a page of alchemy recipes you should check out.
You can always run from a fight sometimes before they see you. If you have camielian spell you can cast that to help conceal your party.

Also, do friendlies such as Braffit and the lay brothers level up to keep up with you, just as monsters do?

Yes, and Sometimes. Most notable friendly levelling to me is on the Tree, where you go Patrol, Hunter, Champion, etc. The Patrols in Arnika only go from L4 to L9.

Thanks Scatter! Just had a quick look at Flamestryke's site, and the poor lay brothers only go up to level 7! I was starting to feel sorry for them yesterday when my level 30 party dropped by Arnika and got into a little fight with the Slashers, and some lay brothers got caught in the crossfire. Needless to say, those lay brothers did not survive one round!
