if i have a fighter with ***** in large swords who duals to a thief and puts * in large swords when he re gains his fighter class will it stay as * or will he also re gain his grand mastery?.

No worries - the higher proficiency level wins out. Unfortunately, they don't stack, so you can't for example put 4 PP into longsword as a fighter and 1 PP as a thief and get grandmastery.
