I prefer to pass, too. It's a lot more efficient and I don't have to rely on my ball skills. I only use my moves when there's just one defender between me and the goal, or when I can create an odd-man rush by beating the guy nearest me.
I look at it as a matter of probabilities. Passing requires one touch, and your defender is away from the ball. You only have one chance to mess up. Dribbling requires at least two touches, and the defender will (usually) have a better chance of intercepting. Two chances to mess up, and a correspondingly better opportunity for the defender to react effectively.
