In the underdark at the mindflayer lair when they capture you why don't the control you with their psonic powers? Wouldn't you be mind slaves or something?

Well, they keep you as gladiators, after all. They want you to fight and use your skills and mind yourself. If they had controlled you, what would be the fun and entertaining with that?

I've always thought that the Githyanki managed to block the mind flayers domintion allowing the characters to break free. Until that point, there is no way for the characters to escape , because they were under the control of the mind flayers. Could be wrong though.
