How do you mean by "large scale"? I mean, what is the small scale for making beer?
Large scale for me breaks down to 1 brew is ~ 500 barrels ( American 1 barrel is ~ 31 gallons). We make on between 32 and 35 brews a day, 7 days a week. 1 fermentor holds 8 brews.
Small scale is ~ 5 - 10 gallons.

if ye dont mind, which brewery ye workin for? I was just over at the yingling brewery the other day and sampled fresh stock hehe that a cool place, better then busch if you ask me. please don't tell me ye work for Busch?

It's still a baby, so I'm going to leave it to mature, but just thought I'd try a glass of this wine now it's ready.

It's about a week and a half old and it's already pretty nice. Can't wait for it to mature a little.
