Maybe they get in the wound and gum it all up, preventing it from healing properly.
Maybe the sticky strands keep the flesh pulled too far apart to heal properly - the troll being unable to regenerate fleshy bits that did not exist prior to this. I don't know, we're delving into pseudozoological anatomy and thaumaturgy here. I don't think any of us can really qualify as experts. Oh, and a big welcome to Blue Dragon!
