Some spell descriptions (like the animal/monster summonings) say "summons a 10 hit dice monster" or something like that. Some other spells say they effect only enemies with less than x hit dice.
How does it work? I know what, say 2d4, is but I have never come across hit dice before BG2.

It's a D&D term. Essentially, it is how many dice you roll to determine the monster's hit points; in addition, it controls how easily the monster hits other things in combat (kinda like levels).

Hit Dice is the number of dice rolled for a monsters hit points. They usually go with a fighters hit dice of a d10 for rolling hip points. So if they say 10HD it means they roll 10d10 for hit points.

So in BG2 the dice are 10-sided? Or 6-sided?

It depends. For weapons and damage they can be anywhere from 4 sided to 12 sided
I believe that rolling for hitpoints for your characters uses different dice..fighters get d10, barbarians get d12 and so on.

d20 games use dice ranging from 4, 6, 8, 10, 12 & 20 sided....
