Marinated and Stewed Bunny


2 cups red wine
1/2 cup red wine vinegar
1 carrot pealed and chopped
1 onion chopped plus 2 cups minced onions
1 bunny cut to pieces
fresh parsley or thyme
salt and pepper to taste
4 slices good bacon
1 cup diced carrot
1 cup diced celery
1/2 pound wild or button mushrooms
Flour for dredging
1 ounce unsweetened chocolate


Mix together first seven ingredients (except 2 cups minced onion) in a large bowl and marinate 12 to 24 hours

Strain marinade and reserve. Dry bunny pieces

Dice bacon and cook til crisp in a dutch oven. Remove bacon with slotted spoon and set aside.

Add minced onions, carrot, and celery. Cook over med. heat stirring occasionally. Chop mushrooms and add.When veggies are soft (about 10 min.) remove with slotted spoon and add to bacon.

Turn heat to Med/high and add bunny pieces dredged in flour. Brown in the fat in pan. Lower heat and add veggies, bacon and reserved marinade. Raise heat, bring to a boil and add chocolate, salt , and plenty of pepper


Lower heat, cover, and cook till bunny is tender and the sauce thick, about 1 hour

Serve immediately with buttered noodles, rice, or crusty bread

Actually I had Rabbit stew when I visited Moiraine. Very nice indeed.
