I hate mindflayers. SirGwayne is right, undead are best. In the absence of summon undead spells, just try to get a wall of summoned creatures between your party and the enemy.
Don't send in anyone with low intelligence to do melee combat (Minsc would last about 20 seconds if you're lucky) as they suck your brains out. Try to stop them getting near you and pelt them with missiles. The fire a wand and shut the door trick is also quite effective.
As Melusine said, protect yourself with Chaotic Commands spell.

Also when summoming skeletons. Be sure to raise 5. 1 vs 1 they lose. However 5 vs 6 Mindflayers they do ok. It seems to be a collection of skeletons that do damage.

Invisibility. Mind Flayers can't detect invisible players, and invisibility prevents a psionic blast affecting a character, even if the psionic blast was cast before the character became invisible, the invisibility will prevent it from working. A useful tip, if you can find a way of becoming invisible at will...(spoiler)

Ulitharids are harder. They're supposed to be the nobility among mind flayers. My solution is simple - Chaotic Commands on the party tanks

1. Ulitharids drain 5-6 points of INT per succesful attack and they are tougher than Mind Flayers. Mind Flayers drain "only" 3-4 points of INT per succesful attack.
2. Fighting strategies:
a) Skeleton Warriors mentioned above.
b) Greenstone Amulets pickpocketed from Mordekainen's Swords prevent the Mind Flayers and accompanying Umber Hulks from stunning and dominating you. Chaotic Commands makes you safe from dominating but not from stunning. Note: The Greenstone Amulet and Chaotic Command spell do not prevent the Mind Flayers from INT-draining you.
c) Send Mordekainen's Swords in. Very efficient!

Best thing to do is to send in the mindless Mordekainen's Swords!
If you have to engage them, and you have a potion of Genius( purple one) that can help offset the brain draining effects. Drink before attacking if possible.

I just haste my archer, chaotic command or helm of charm protection, have the thief set up a bunch of trap, then started kiting those suckers around.

they are not that though just run and hit run and hit and don't last longer than the hit takes then run away... if you want to make it the easier have the last of the party standing along the walls training archery

One more thing. If your tank is hit by a Mind Flayer and your INT drains, run around the room for a few secods. The INT will come back and you can thwock him again. Doing this stops the instant death that occurs if you stay close after being hit
