Tools -> Junk Mail Controls . You can tell it what to do with anything that it marks as junk.

Yes. Although I would recommend just moving them to a folder... the filter will likely make mistakes from time to time, and you may have to teach it what isn't junk aswell as what is. By moving them to a folder, you can just check every once in a while, so that you can make sure it hasn't made any mistakes, and they don't polute your actual mail. Win-Win (or, maybe that should be Gnu-Gnu... ).

The default is 'junk', which it will create if you set it.
