I just went out of town (unequipped of course) and set the game to seldom and weak. Then you just stand there for a couple of hours (go watch D&D or something) I never got attacked and just estimated from the daylight how much time had gone by. Then I went back into town and "Poof" I was a Monk!

..it's right between the Quit button and the load button in the bottom left hand corner. It's the options menu and the manual says (I think) you can change it anytime. You'll know it's working 'cos you'll get less experience for killing the same stuff.
