Gelatinous cubes are a personal favorite. I also like rust monsters (and the psionic equivalent). Anything that's extraordinarily dangerous in an *interesting*/unexpected way.

I was thinking of the creatures that look like stalagmites and drop on unsuspecting adventurers. But, hook horrors are good too.
