Hey all, I have a question that concern's number's.. At work we are going to have a Thanksgiving lunch and my team is required to make stuff with sweet potatoe's/yam's. We are making your standard sweet potatoe dish. My question is how many sweet po. when mashed down make 12 cup's ?

Also if anyone has any other cool sweet potatoe dish's post them here or give me a link.

Personally, I don't mash sweet taters. I peel them, boil them 'til *almost* done. Cool slightly then slice into 1" 'medallions'. Then make a light syrup with some butter/marg., brown sugar, cinnamon, dash of nutmeg, salt and cloves. Put sweet 'taters into the syrup (which should be slightly thickened) and coat well. NO marshmallows!!! This recipe is really easy and oh-so yummy--makes a delicious alternative to the too-sweet fluff mush usually served!

Thankey, I personally dont mash mine either, but since we wont have anything other than a micro wave to cook/heat thing's with are option's are limited to pre cooking everything and warming it the day of. So I/we were looking for storeable and reheatable dishes for this event. Our main kitchen will be all backed up with TURKEY's and other wholesome entree's. Thank you for the recepet' though I usually take mine from the oven w/brown sugar,cinnamon, and yes whipped cream.

Actually you can nuke them! The syrup part takes a bit of care since you don't want to overcook, but it's still relatively easy.

And if made ahead of time, this reheats very nicely. Just an idea.
