I am making a new party and I am wondering how high a paladins (or rangers) wisdom should be seeing as he uses priest spells.

The bare minimum is all you need. Paladins/Rangers do not receive the bonus spell slots benefits of having high WIS.

The bare minimum Wisdom for rangers and paladins (13, I believe) is high enough that they never suffer spell failure. The only benefit to high wisdom for R or P is the saving throw bonus, assuming they get it (there's been some debate on that recently, and I'm not sure if you get Wis saving throw adjustments, although I think so).

Okay, does wisdom hold any benefits for wizards apart from saving throws? Does intelligence benefit a priest?

Answers are no, and no. The only thing stopping you from bringing wisdom and intelligence, respectively, down to 3 is your own sense of roleplaying. Unless you want a wizard or a priest to be the dialogue specialist. High Int and, I believe, high Wis are an asset in dialogue, in addition to Charisma. Paladins also get interesting dialogue options, including ones that garner additional XP.

Based on these three premises, I would probably have a Paladin with minimum wisdom, and use him/her as the party leader/dialogue character.

For a Ranger, WIS=15 or better gives a bonus to their tracking ability. That's the only benefit (other than lore bonus).

EDIT: With the exception of some Specializations, which may require high WIS, having high WIS is not at all important for Wizards. Having very low WIS will reduce lore, but this is only a minor consideration.
