A few questions...

When you start a new game how many point approximately do you get per character? I think its around 300 is that about right?

About what level do you ascend?

And what do you think about this 4 person party,
 Dwarf Monk (for extra damage resistance)
 Mook Rogue (for high STR and magic relms protection)
 Feairy Ninja (Want to use CoC)
 Rawulf Bishop (for high Piety and magic resistance)

Starting points are:
Human, Hobbit: 315
Fellpurr, Rawulf: 305
All the rest : 300

Ascension ~23 (obviously depends on what you want)

Stealth (of the others) could be a problem for the bishop, nothing unusual for the rest (noone for all those goodie weapons/armours though, maybe switch the mook rogue for a mook samurai (giants sword/whatever))

Sounds good, was thinking of taking a level of Rogue for the Bis and doing lots of stealth training in the upper monastery.
Will the Dwarf extra damage resistance be noticeable onto of the monks?

Imho an all stealth party is unbalanced / too easy to play, but your choice ofc. Not sure about the damage resistance. Isn't it like 6% Dwarf +1%/lvl monk? The manual give dwarf monks as an explicit option for good apprentices, so they should add up.
