I think not. The guy will always take the true ore. Though i am not 100% sure

There is a much better use for the real ore then giving it to the temple.

If you play your cards right, you can keep the real ore, and make the temple happy.

After the artist refuses the fake ore (make sure the real stuff isnt in your inventory) go to the temple. Tell them what happened, someone will show up, say that he likes the fake ore, and accept it as a new piece of artwork for the temple. The temple is happy, and you get to keep the real ore to upgrade the Mace of Disruption.

on a sidenote: I remember having the real ilithium on me when I talked to Sarles but just offering him the false through a dialogue option (my memory is fuzzy though). The temple took it gladly howevera and I had the Mace upgraded.

Just dump the real illithuim on the ground before talking to Sarles and then pick it up again after the conversation.

On a related note has anyone heard Yoshimo's comment when the guy in the temple says he wants to use the alloy as the artifact. His comment about how he can create a lump like that every day(a turd) really cracked me up

. I love Yoshimo's little comments.
