I like the second one - it's cool if you move your eyes around in circles - the black dots make a cool pattern!

It's actually much more than this. The Stroop task is a very common neuropsych test for identifying attention and cognitive flexibility. To be able to say the colour and not the colour name you have to able to inhibit your automatic response, which is to say the colour name because reading is an automatic task for (most) adults and older children. So you can test whether someone has attention problems if they are unable to concentrate enough to inhibit the automatic response, and also can identify things like impulsivity - someone who is impulsive can't inhibit their responses either. In the second illusion, there is no black dot at all but just white dots. The black squares confuse your eyes and cross references the colours.

Okay, I did some extensive lab research* on the second trick and found out that it's actually the grey lines. Without the grey lines, you just see white dots on a black background. Perhaps this is because removing the lines stops the blackness from being squares, as Lauren said this is what makes it work.

*Copied into MS paint and removed the lines
