In NWN can u dual any class with any other class (i.e paladin/sorcerer)

Yes you can. The restrictions are nullified completely, both from the BG series (2:nd editionish and 3:ed players handbookish too)
But you don't dual class, you multiclass in 3:ed. Just make sure to read up on the chapter describing this in the manual for XP penalties etc.
