Chaotic commands cast on people in the front line will stop them being stunned. Potions of genius will help delay intelligence draining killing them. Try to draw them out one by one with one or two hasted tanks then bringing them back into to where the rest of the party is waiting with missile weapons.

Also there is a room where you can create BRINE POTIONS -not ILLITHID SERUMS-These offer complete immunity to psionic attacks when consumed.
If lacking those two you can always try luring the illithids one at a time and hacking them to pieces with your party

Also,
There is a magic greentstone amulet hidden in a wall nook in the beholder lair. When activated, the amulet makes you totally immune to psionic blasts from mind flayers. This combined with the brine potions, should make the lair "doable". As to the exact location of the amulet, I think the location is listed in the Ironworks BG2 walkthrough.
