Next time I play I think I will try a paladin,
I hate undead and demons and dragons with a
passion. Which is better a cavalier or an undead
hunter?

If you want combat wise, Cavalier which I proudly play, but if you want the ultimate bootwhopper for bodhis shock troops, undead hunter!

I think the best is a Cavalier, because he has many bonuses against dragons and at your Paladin Stronghold you must kill the Red dragon.
Well on the other hand Undead Hunter is avery good choice. He has many bonuses against vampires, But I think it is better to choose Cavalier.

Ah...you asked the right person.
Though I only played Paladin most of the times, I believe an Undead Hunter will be a good choice for your likings. 'Cause you said you hate undead, right?

You'll love Paladin when you have Carsomyr in your hands...
Being a Paladin is addictive believe me...I had too much experience.
NOTE:

Because of the nature of SOA, Undead Hunters are unreal. stick an undead hunter in a room full of vampires and its all over. Its unreal. With Carsomyr, you get +13 to hit. +13! Okus immunity to hold is real nice. If you're looking for a more traditional butt-kicker, the cavalier makes more sense and probably wrecks shop in TOB since I hear there are more demon type creatures in the expansion. Sadly, in SOA there just aren't enough dragons/demons to justify him over an undead hunter.

Baron Nocturna is right! In TOB you have to face the powerful Demogorgon the king of demons!

Where they are monsters and barbarians there will be Byronas fighting against them.

How about playing an Anti-Paladin? You get to still use the Holy Avenger, but can pick up the Unholy Reaver for fun.

Cavalier, would be better in my opinion.

To gain level drain immunity, just wear the Amulet of Power.
