The glucose isn't a chain - the wording clearly spells out that it is in pyran form (ie a corupted hexagonal ring of 6 - 5 C's and an O), and again, fructose is as a furan (pentagonal with 4 C's and an O) rather than a chain.

It's just the overly correct technical application of chemical convention to say Sucrose - or just common sugar .

Sugar is of course imporant in the fermentation process, so I wasn't in fact alll that far off topic
