Rober Jordan (Wheel of Time series) - highly recommended
George R Martin (Song of Ice and Fire series) - GREAT Nobility Intrigue... makes the Nobles involved in Jordans "Game of Houses" look like a bunch of easy going simpletons in comparison.
Terry Goodkind you already mentioned... but he's very good!
Marrion Zimmer Bradley (the Mists of Avalon)

there's lots more but these are regular or recent reads that have stuck in my mind.

I concur with everyone on Thoran's list EXCEPT for Jordan. The Wheel of Time series left me cold after a while.

Others to consider:

Robert Asprin
George Cook - The Black Company Series
Robert Salvatore - He's done a lot of stuff outside of Forgotten Realms books and some of them are very good

C.S Friedman (specifically the Coldfire trilogy)

Steven Erikson!!! I can't recomend his books enough (if you can get them easily outside of UK..I know they're all on Amazon UK)

Marcus Herniman is another good new author

Terry Pratchett. His Discworld-series is hilarious. Sheer brilliance, if you ask me. Great read if you like a little humour with your fantasy every now and again.

The classics :
Tolkien - More than famous
David eddings - Belgariad and Tamuli, both diferent stories but same style, don´t recomend Elenium series
Margaret Weis & Tracy ... - I´ve read the death gate cycle which is extraordinary ... but 7 books. Didn´t like the darksword trilogy and the Dragonlance books.
Terry brooks - Not so good but.... just my opinion

And some very good authors :

Philip G. Walliamson - My favorite fantasy author but i've been having trouble fiding is books. ( u must read the 1st world chronicles )
Ursula Le Guin - Earthsea series ( Good )

Robin Hobb ( Assasin apprentice n liveship trilogy)

They are both good fantasy series author and i recommend them if u had not already read them.

-Robert Jordan (Wheel of Time series)
-David Eddings of course !
-Anne Mac Caffrey (the Pern series, the 'Ship' series, the 'Crystal Singers' trilogy)
-Jennifer Roberson for the 'Tiger and Del' series (Sword-xxx) - I didn't much like the Cheysuli series
-Mercedes Lackey (Valdemar series)
-Robin Hobb (one of the greatest)
-Weiss and Hickman (the "Death Gates" series is awesome)
-Raymond E. Feist
-Marion Zimmer Bradley (some books are very very good, others are average)
