I vote for FFXI, "evercrack" is too repetitive (though addictive).
Jorath made a good point - EVE online is an interesting, very large game. A caveat though, it's played best as a social game - the best gaming moments come as a result of building relationships, both "business" and "personal" with other players in the game. (It helps being able to chat with other players while your travelling or waiting for the mining to finish.)

As much as I don't mind scifi games, I really prefer fantasy if at all possible, so EVE is not really high on my list from what you have been saying (does sound cool, though).
From what everyone is saying, it seems like people like Final Fantasy XI more than Everquest. Why? What are the things that make the one better than the other (obviously opinion in this case, as each person has their own tastes). Is the combat system better in Final Fantasy XI, or is gameplay better? Are there more areas, quests, character options, etc. in one over the other? I checked GameBanshee's review of Final Fantasy XI, and they gave it a 77. Not exactly a great review, but I have disagreed with them in the past on games.

I say go for D&D Online. Read more to know why.
I played lots of online games... Asheron's Call 1 and 2, Lineage 1 and 2, Anarchy Online, Ragnarok Online and some betas. Most MMORPGs are almost the same. You kill monsters to get better items to kill more powefull monsters to get better items to kill more powerfull monsters to get better items... Asheron's Call 1 was the best mmorpgs I ever played, because its, the only one that has real quests and dungeons, with a story and puzzles. Others MMORPGS only have quest of the type "loot 10 bug eyes and bring them to me for 500 gold" or "kill that monster that spawn every hours and is camped by 50 players to get that new weapon". AC 1 was not like this. You had to get a few friends, do some backstory, then enter a dungeon, it would take teamwork, go pull a level to open a trapdoor, have your thief friend unlock another door, solve a puzzle for the keys, go through the labyrinth and then, kill the boss and use the key on his chest. All the while trying to survive against the monsters there. Some of the greatest quests were spread through 4-5 dungeons you had to complete before being able to go to the final dungeon. Others RPGS like Ragnarok Online and Lineage 1 and 2 don't even have interactible objects. They just have the "get loot and bring it to me" quests I mentioned first. Anarchy Online quest were enter randomly generated building and get me randomly selected item, or kill randomly selected monster.. Well... Both Dungeon and Dragons online and Middle Earth online are developed by Turbine, the company that made Asheron's Call 1 and 2. This in my opinion mean that those games are going to be very good. Hmmm...choices, choices.
Good point, Luvian. It does get rather old doing essentially the same quest over and over again. It also gets old having to deal with campers just to get a decent weapon. I'll probably wait for D&D online, but Everquest 2 is in beta now, and it looks pretty cool. I'm also checking out City of Heroes (big comic book buff back in the day). It will probably be one of the three, but first I have to get my internet back up (house got hit by lightning on Saturday, and I am currently at school typing this).

Everquest 2 just look like Everquest 1 with better graphics, there are other great looking games out there. Asheron's Call 2 and Lineage 2 both look good, So will about every new MMORPGS...
