Joluv is *always* (as far as I've seen) to the immediate right of the fire pit looking BBQ's (or whatever) that are in the middle of the common room in the copper coronet. Ive done the slaver quest 4 times since I installed the bonus merchants and he's never run away for me, so maybe you mean other kinds of fights. As long as you don't attack people other than the slaver quest (bad idea in the copper coronet anyway as so many plot characters are in there) then you should be right (also be very careful of using area effect spells like cloud kill or fireball where there are bystanders, it's a good way to suddenly kill 3 innocents, lose 15 reputation, be swarmed by soldiers of amn, lose half your party as they object to your actions and never be able to innitiate dialogue in that area ever again). as for winzip putting things in the wrong folders, most things tell you to install to BG 2 root directory and just tick 'use folder names'. Either way, you can see in winzip if the files have subfolders or not, so just check what you're doing before you do it and everything should be apples
