OK, I am finally in the town and picked up a few NPC's. The problem is I would like to play as a mage, but when starting I only seem to get the default class of fighter. Basically I want to know when starting a new game how do I choose a class?

When you start a game you'll always start as a Fighter, if you want to become something else ( Mage or Thief) you'll have to find someone to teach you in the specific area.
*Hint 1* Go to a place called 'Ragpickers Square', there are two persons here that might interrest you. One of them, called Ratbone, can teach you to become a Thief and the other, an old woman in one of the houses, can tell you something about magic. You'll have to perform a few 'quests' to become a Mage. *Hint 2* Don't forget that some NPC can teach you additional spells when you have become a Mage.

you can switch between the three classes during the game as often as you want.
