Well there are a few obvious ones that come as quests, such as the staff of magnus, wraithguard, sunder, keening things like that. But other than that, the key is to find a lot of decent priced items, mainly daedric weapons will do the trick, so just explore any daedric ruins you encounter, and don't be afraid to fight dremora, they're almost always guaranteed to be in possesion of some good item.

Tel Fyr has plenty of cool unique items. One of the best items for a thief is in a pond neer B'thugmnz(?) north of Gnisis. It is an amulet you get after finding a ring.

im not 100 percent on this but i think your chance of finding items and monsters is dependent on luck and level, i gone back to places i went to when low level where before i found a few lowlevel beasties now im getting dremora lords and golden saints spawning and obviously the loot is things like 120,000 gold weaponary, so apart from the fixed items in the game the majority of the best loot is found randomly i think, just build your level and you'll get lots of nice stuff in bandit caves and in ancient tombs.
