I read somewhere that when you create characters, you get to give them personalities, I'm just wondering what kind, mainly because all I got at the moment is the demo, and unfortunly I can't create characters off of that.

I'm not sure, but i think in the Demo you can change your personality any time, just like in the game:
Click on your character's name in the Inventory screen, and you get a screen that lets you change picture, name, personality. |

Do'h, nope, unfortunly you cannot change personality, names, etc. in the demo, do'h.
