I was innocently going about my business in a brand new game and fresh out of Château Irenicus was in the sewers on my way to make Keldorn a part of my team. Being newly freed I wanted to avoid the confrontation with the Rakshasa and his Kobold minions so I trailed along the southern part of the sewers swinging around to pick up Keldorn. I was approaching the place where if you drift down the southern off ramp you attract the attention of the Sea Troll of Roger the Fence. I didn’t attract the Sea Troll but just as I passed a Beholder and a couple of Gauths teleported in and insta-killed my PC. These thing have never come up before. Are they from some mod? (I haven’t put in a mod in months) What gives?

I have heard something like this happening before... I've never encountered it and although it sounds strange i'm sure it is an encounter. Perhaps the more knowledgable ones (hint hint guys) could help you out. I'm sure i've heard something like this happening before...

-the only beholder down that neck of the woods that I know of would be part of the Unseeing eye quest, I dont suppose you wandered into that domain? As I'm sure meeting up with a beholder in the sewers is no random encounter

There are two possible reasons why you encountered that Beholder.

1) Your party was of high levels.

2) You installed the mod component, always spawn toughest spawns.

In any case, it is in the default game.

Always Toughest Random Spawns is a component of Tactics.

I don't know if your party being of high levels is enough to trigger their appearance, but I know they do appear there if you go there in Chapter 6 (and you haven't cleared that spawn point previously).

Not high level at all. Level 8. Literally fresh out of Irenicus’ dungeon…I Haven’t even been inside the Copper Coronet yet.
