Out of the NPC's that you get, who does the best at turn undead and also, which classes have the best chances at turn undead? Also, if you turn undead, and they turn to your side, can you still kill them?

Well, Anomen is best for turning or destroying undead. Viccy is best for taking control of undead.

Turning undead starts out rather poorly, but, over time, you can make vampires and even liches explode just by looking at them. Or take control of them with an evil cleric.

So class has nothing to do with it, they all have the same level of turn undead and evil characters take them over?

Class has a lot to do with it.

Fighter/Cleric multiclass has poor undead turning abilities for a long long time. Single class Clerics level higher faster. The higher the level of the Cleric, the better. For a low level Cleric, even turning basic skeletons can be difficult, if not impossible. However, a Cleric in his mid 20s has a good chance to blast most anything into dust.

Well I know its more powerful as you level up, but I'm talking about are clerics more powerful than paladins or anything else that can turn undead?

Well that depends. Paladins turn undead a few levels lower then a cleric. Out of a Paladin the same level as a Cleric, then yes, the Cleric is better. However, a 20th level Paladin will outshine a 10th level cleric.

IIRC, Paladins turn undead 3 levels lower then a cleric.

And the stupid Undead Hunter is bugged. Undead Hunters were meant to turn undead as a Cleric of equal level, but, this is not so in SoA. Stupid stupid stupid.

alright, but a cleric of level 10 and paladin of level 10 are put together, the cleric would be better in turning undead correct?

yup by two or three levels(i forget which) It's proably not all that useful until around level 10 and then only in certain situtations. about 15 it becomes really useful, around 20 you could proably use it very effectively in most situtations. around 25 even liches proably won't stand much of a chance.

The only thing what matters here is the Turn Undead level (TUL). Clerics have TUL equal to their character level. Paladins have TUL = character level - 2. Other classes cannot turn undeads.
In my experience, your TUL must be comparable with the undead's level at least if you want to succeed somehow, at least, to make it run. Your TUL must be considerably higher than the undead's level if you want to destroy/control the undead. Now:
1. Liches are usually level 20 or so. Shangalar is level 26, Kangaxx is level 27.
2. Mummies are usually level 7, Greater Mummies are usually level 14.
3. Vampires are usually level 8 - 13. Bodhi is level 25.
4. Ghouls are about level 12.
5. Not all undeads can be turned. Kangaxx the Demilich seems to be immune to Turn Undeads, Bodhi seems to be immune as well.
6. Not all monsters that seem to be undead are undeads. For example all those shadows do not seem to respond to anti-undead tools.

Clerics will splatter Liches and other 11HD creatures at lvl 19 according to Gamebanshee's table. This corresponds fairly well with my own experience.

Oh, and all types of shadows sure can be turned.
