Cavaliers are better than Undead Hunters in my opinion. You want level-drain immunity? Wear an Amulet of Power of wield Mace of Disruption +2, heck, you can also gulp a Potion of Invisibility and Turn Undead.
In the long run, Cavaliers will prove more versatile.
