I don't know about the United States, but here in the Netherlands apart from a degree (which, to be honest, only starts with a bachelor -- you're better of with a master's degree) your resume is looked at for extracurricular activities (hobbies, sports etc.). And you really should be more specific "Helping out locals" says absolutely nothing.
