Alot depends on what else is in your party. But with both Paladin/Sorc and Barb/Druid (and assuming no HOF, just a normal game where you hit roughly level 16), 2 levels is all I would take. I would only go with more if I wanted a tank with some flash, but you're saying it would be a main spellcasting character, so 2 levels is all.
