Hmm, Thai food may be your best bet.
Even though Indian and Thai use a lot of meat and fish, you can get around this just by removing it.
The saving grace of Thai food, is most of it uses Coconut milk instead of dairy milk, so you'll be fine. As with indian food as well.
I'd suggest a Thai Green Curry....easy to make, and lovely!
But I've no idea how anyone can be a vegan....two of my favourite things - rare steak and cups of tea with milk in it
