I found the following to be very effective:

Half-elven: Fighter
Dwarvin: Fighter
Halfling: Fighter/Thief
Elven: Fighter/Mage
Gnomish: Cleric/Illustionist
Human: Cleric

* This gives me 4 fighters, 2 mages, 2 clerics, and a thief.
