Me Personally:

Paladin
Ranger
Thief
Druid or Druid/Fighter
Cleric/Mage
Mage

Perfect balance of Meat Shields/tanks and spell casters. Everyone but the Thief can Cast spells and you have three good fighters with the Thief backup fighter to protect the mages...and at higher level, you have four people who can heal you, AND you have access to all the spell classes so you can always try to have the right spells ready.
