Ack, dual's rightly getting the blunt end in this thread. I prefer to think of it like this; the fighter grows up training with his swords, shields, whatever, and goes out into the adventuring world. He gets to a certain stage whereupon he masters his weapon of choice and simply can't better himself with it any further. Favouring that weapon and not wanting to expand his field, he takes an interest in the arcane arts and leaves to study magic for however many months or years you like, or simply maintains his new practice throughout the story. True, it'd make more sense if you didn't have to surpass a level to pick up your old skills, but for the sake of game balance it doesn't worry me too much. Dual-classing doesn't have to be that inelegant.
