You get to have apprentices if you have the mage stronghold, which is basically the Planar Sphere (Lavok will offer you the sphere if you are a mage and has finished the P.S. quest). Since you have already accepted the fighter stronghold, I'm afraid you will have to wait until the next game to get the mage stronghold. I think there are a total of 3 appentices and they can make you some items (e.g. Robe of the Apprenti), but there are costs attach to creating these items.
