Answers:
1. A sorcerer is very good but if you want a mage, a conjurer or a necromancer are probably the best.
2. If your main character is a paladin, don't take him. Otherwise take him and kick Anomen off because Keldorn is the only NPC who can hold the Holy Avenger, one of the best swords in the game.
3. Mages stronghold is the planar sphere.

When you go to Umar Hills, you will find Valygar Corthala in a house at the north. He will either join you or you'll kill him and then take his body. It's the only way to get in the planar sphere(in the slums district).
